Description

Ingredients

  • 3/4 cup all-purpose flour (90 g)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar (200 g)
  • 1 cup canned pumpkin puree (240 g)
  • 8 oz cream cheese
  • 2 tbsp unsalted butter
  • 1 cup powdered sugar (120 g)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 15×10-inch baking pan with parchment paper, leaving an overhang.
  3. Lightly grease the parchment with cooking spray or butter.
  4. In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. In a large bowl, beat eggs and sugar until pale and fluffy, about 3-5 minutes.
  6. Gently fold in the pumpkin puree until well combined.
  7. Gradually add the dry ingredients to the wet mixture and fold until just combined.
  8. Pour the batter into the prepared pan and spread evenly.
  9. Bake for 13-15 minutes, until the cake springs back when touched.
  10. Lift the cake out using the parchment and place it on a powdered sugar-dusted towel.
  11. Roll the cake and towel together into a log while still warm.
  12. Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
  13. Unroll the cooled cake and spread the cream cheese filling evenly.
  14. Roll the cake back up without the towel and wrap in plastic wrap.
  15. Refrigerate for at least an hour to set before serving.
