- 3/4 cup all-purpose flour (90 g)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar (200 g)
- 1 cup canned pumpkin puree (240 g)
- 8 oz cream cheese
- 2 tbsp unsalted butter
- 1 cup powdered sugar (120 g)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- Line a 15×10-inch baking pan with parchment paper, leaving an overhang.
- Lightly grease the parchment with cooking spray or butter.
- In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat eggs and sugar until pale and fluffy, about 3-5 minutes.
- Gently fold in the pumpkin puree until well combined.
- Gradually add the dry ingredients to the wet mixture and fold until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 13-15 minutes, until the cake springs back when touched.
- Lift the cake out using the parchment and place it on a powdered sugar-dusted towel.
- Roll the cake and towel together into a log while still warm.
- Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
- Unroll the cooled cake and spread the cream cheese filling evenly.
- Roll the cake back up without the towel and wrap in plastic wrap.
- Refrigerate for at least an hour to set before serving.
