Description

Juicy pork tenderloin smothered in a sweet and tangy apple cider glaze, served over a bed of creamy sweet potato mash. This comforting and flavorful dish makes for an easy and delicious weeknight meal.


Ingredients

  • 1 lb pork tenderloin
  • 1 cup apple cider
  • 2 tbsp brown sugar
  • 2 tbsp unsalted butter
  • 2 lbs sweet potatoes, peeled and cubed
  • 1/4 cup milk
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Season the pork tenderloin with salt and pepper.
  3. In a large oven-safe skillet, sear the pork over medium-high heat until browned on all sides, about 2-3 minutes per side.
  4. Transfer the skillet to the preheated oven and roast the pork until it reaches an internal temperature of 145°F, about 15-20 minutes.
  5. Remove the pork from the oven and let it rest for 5 minutes. Slice the tenderloin.
  6. In the same skillet, combine the apple cider and brown sugar. Bring to a simmer and cook until the mixture thickens to a glaze, about 5-7 minutes.
  7. Add the sliced pork back to the skillet and coat in the apple cider glaze.
  8. Meanwhile, place the cubed sweet potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  9. Drain the sweet potatoes and mash them with the milk. Season with salt and pepper.
  10. Serve the pork tenderloin with the sweet potato mash, drizzling any remaining glaze over the top. Garnish with fresh thyme.
