- 1 lb pork tenderloin
- 1 cup apple cider
- 2 tbsp brown sugar
- 2 tbsp unsalted butter
- 2 lbs sweet potatoes, peeled and cubed
- 1/4 cup milk
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F.
- Season the pork tenderloin with salt and pepper.
- In a large oven-safe skillet, sear the pork over medium-high heat until browned on all sides, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven and roast the pork until it reaches an internal temperature of 145°F, about 15-20 minutes.
- Remove the pork from the oven and let it rest for 5 minutes. Slice the tenderloin.
- In the same skillet, combine the apple cider and brown sugar. Bring to a simmer and cook until the mixture thickens to a glaze, about 5-7 minutes.
- Add the sliced pork back to the skillet and coat in the apple cider glaze.
- Meanwhile, place the cubed sweet potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the sweet potatoes and mash them with the milk. Season with salt and pepper.
- Serve the pork tenderloin with the sweet potato mash, drizzling any remaining glaze over the top. Garnish with fresh thyme.
