Description

This easy polenta shrimp recipe features creamy polenta topped with succulent garlic shrimp. It’s a flavorful and quick meal perfect for any night of the week.


Ingredients

  • 1 cup polenta
  • 4 cups water or broth
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Bring water or broth and salt to a boil in a medium saucepan. Gradually whisk in polenta.
  2. Reduce heat to low, cover, and cook, whisking occasionally, until polenta is thick and creamy, about 20-25 minutes.
  3. Stir in butter and Parmesan cheese until melted and smooth. Keep warm.
  4. While polenta cooks, heat olive oil in a large skillet over medium-high heat.
  5. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through.
  6. Add minced garlic and red pepper flakes to the skillet and cook for 30 seconds until fragrant.
  7. Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
  8. Stir in chopped parsley. Season with salt and pepper.
  9. Spoon creamy polenta into bowls. Top with the garlic shrimp mixture.
  10. Serve your delicious polenta shrimp immediately.

Notes

  • For a richer polenta, use milk instead of water or broth.
  • Add a splash of lemon juice to the shrimp for extra brightness.
  • Adjust red pepper flakes to your spice preference for spicy shrimp cheesy polenta.
