Ingredients

- 4 large flour tortillas (8 to 10 inches)
- 1 cup shredded mozzarella cheese
- ½ cup pizza sauce or marinara
- 20–24 slices of pepperoni
- 1 tablespoon olive oil or butter (for the skillet)
- 1 teaspoon Italian seasoning (optional)
- Pinch of garlic powder (optional)
- Sliced black olives
- Sautéed mushrooms or bell peppers
- Crushed red pepper flakes
- Grated Parmesan cheese
Instructions
- Heat a large skillet over medium heat and add a little olive oil or butter.
- Spread 2–3 tablespoons pizza sauce on a tortilla. Add mozzarella, pepperoni slices, and optional toppings. Sprinkle with Italian seasoning or garlic powder if desired. Top with a second tortilla.
- Place quesadilla in the skillet and cook for 2–3 minutes per side, pressing gently, until golden brown and the cheese is melted.
- Cook the second quesadilla the same way.
- Let rest 1 minute, then slice into wedges. Serve warm with dipping sauces.
