- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder

- 1/2 cup chopped pistachios (plus more for topping)
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the pudding mix, milk, oil, and eggs until well combined.
- In a separate bowl, mix the flour, sugar, baking powder, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Fold in the 1/2 cup of chopped pistachios.
- Pour the batter into the prepared loaf pan and top with additional chopped pistachios.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
