Description

A delightful and moist Pineapple Heaven Cake recipe that’s easy to make from scratch. This tropical cake features a rich cream cheese frosting and is perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 cup powdered sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the crushed pineapple.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake is cooling, prepare the frosting. In a bowl, beat together the softened cream cheese and powdered sugar until smooth.
  11. Gradually add the milk, beating until the frosting reaches your desired consistency.
  12. Spread the frosting over the cooled Pineapple Heaven Cake.

Notes

  • For an even moister cake, use fresh pineapple instead of canned.
  • You can add shredded coconut to the batter for a tropical twist.
