  • 1 tablespoon olive oil
  • 2 store-bought flatbreads or naan breads
  • 1/2 cup pesto sauce
  • 1 cup mozzarella cheese
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh basil leaves (chopped)

Instructions

  1. Prepare the chicken by patting it dry and pounding it to an even thickness. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 30 seconds, then reduce heat and cook for about 6 minutes per side until it reaches an internal temperature of 165°F (74°C).
  3. Shred the cooked chicken using two forks and set aside.
  4. Preheat your oven to 400°F (200°C).
  5. Assemble flatbreads on a baking sheet: spread pesto sauce, top with shredded chicken, halved cherry tomatoes, mozzarella cheese, and fresh basil.
