- 1 pound store-bought or homemade pizza dough, at room temperature
- 2 tablespoons cornmeal, for dusting
- 2 tablespoons olive oil, plus more for brushing
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Otherwise, lightly oil a large baking sheet and dust with cornmeal.
- In a small saucepan, heat 2 tablespoons of olive oil over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned. Remove from heat and stir in thyme. Let the oil cool slightly.
- On a lightly floured surface, stretch or roll the pizza dough into a 12-14 inch circle. Transfer to prepared baking sheet or pizza peel.
- Brush the dough with the garlic-thyme oil, leaving a 1/2-inch border.
- Mix ricotta with salt and pepper and dollop over dough. Add mozzarella and Parmesan. Sprinkle red pepper flakes if using.
- Bake for 15-20 minutes, until golden brown and cheese is bubbly. Let cool 5 minutes before slicing.
