A quick and delicious recipe for Mongolian Ground Beef Noodles that combines savory flavors with a hint of sweetness, all ready in just 30 minutes.

- 1 pound ground beef (80/20 lean-to-fat ratio)
- 3 tablespoons cooking oil, divided
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 green onions, sliced (white and green parts separated)
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar, packed
- 3 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons cornstarch
- 1/4 cup water (for slurry)
- 10 ounces linguine or lo mein noodles
- 2 tablespoons toasted sesame seeds
- Fresh cilantro, chopped (optional)
Instructions
- Bring a pot of salted water to a boil. Cook noodles until al dente. Drain and rinse under cold water. Toss with 1 tbsp oil.
- In a small bowl, whisk soy sauce, brown sugar, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. In another bowl, mix cornstarch with 1/4 cup water for slurry.
- In a skillet, heat 2 tbsp oil over medium-high heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Add garlic, ginger, and white parts of green onions. Stir-fry for 1 minute.
- Pour sauce into the pan, bring to a simmer. Stir in the cornstarch slurry and cook until thickened, 2–3 minutes.
- Add noodles and toss to coat evenly. Cook another 2 minutes until heated through.
- Top with green onion tops, sesame seeds, and cilantro. Serve hot.
Notes
- Use gluten-free soy sauce and noodles for a gluten-free version.
- Make the sauce ahead for quicker prep.
- Use a wok for better stir-fry flavor.
