Description
These air fryer egg rolls are crispy on the outside, perfectly seasoned on the inside, and ready in just 20 minutes. A healthier version of the classic Chinese takeout favorite.

- 1 tablespoon olive oil
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 pint shiitake mushrooms, chopped (about 2 cups)
- ¼ cup chopped scallions (green onion)
- 2 cups broccoli slaw
- ½ pound ground turkey (93/7)
- 1 teaspoon fish sauce
- 2 tablespoons tamari or soy sauce
- 1 tablespoon sesame oil
- 12–14 egg roll wrappers (Nasoya brand recommended)
- Olive oil spray or brush
- Small bowl of water (for sealing wrappers)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ginger paste and garlic paste, stirring for about 30 seconds until fragrant.
- Add the ground turkey to the skillet and cook until no longer pink, about 3-4 minutes, breaking it up with a wooden spoon.
- Add the chopped shiitake mushrooms, scallions, and broccoli slaw to the skillet. Cook for 3-4 minutes until vegetables begin to soften.
- Pour in the fish sauce, tamari, and sesame oil. Stir well and cook for 1 more minute.
- Transfer the filling to a bowl and let cool slightly.
- Place an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of filling slightly below the center.
- Fold the bottom corner up over the filling, then fold in the side corners. Wet the remaining corner and edges with water, then roll tightly to seal.
- Lightly spray or brush each egg roll with olive oil on all sides.
- Place egg rolls in the air fryer basket in a single layer. Cook for 5 minutes, flip, then cook for another 2-3 minutes until golden brown and crispy.
Notes
- For gluten-free egg rolls, substitute regular wrappers with rice paper wrappers.
- Make a vegetarian version by replacing ground turkey with crumbled tofu or chopped mushrooms.
- Allow filling to cool before rolling to avoid soggy wrappers.
- Prepare the filling up to 24 hours in advance and refrigerate.
- For reheating, use the air fryer at 350°F for best texture.
