Ingredients

  • pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup grated Parmesan cheese
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped (plus more for garnish)
  • 1 teaspoon garlic powder
  • 810 wooden or metal skewers (if using wooden, soak in water for 20 minutes)

Instructions

  1. Cut the chicken breasts or thighs into even 1-inch cubes. Try to make them as uniform as possible to ensure they cook at the same rate.
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly. Cover and marinate for at least 15 minutes (or up to 4 hours in the refrigerator for deeper flavor).
  3. In a shallow dish, mix together the grated Parmesan cheese, panko breadcrumbs, chopped parsley, and garlic powder. Set aside.
  4. If using wooden skewers, ensure they’ve been soaking in water for at least 20 minutes to prevent burning in the air fryer.
  5. Thread the marinated chicken pieces onto skewers, leaving a small gap between each piece to ensure even cooking. Each skewer should hold about 4-5 pieces of chicken.
  6. Roll each skewer in the Parmesan mixture, pressing gently to adhere the coating to the chicken.
  7. Preheat your air fryer to 380°F (190°C) for 3 minutes. Lightly spray the air fryer basket with cooking spray.
  8. Place the skewers in the air fryer basket in a single layer. Cook for 10-12 minutes, turning halfway through, until chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  9. Once cooked, carefully remove the hot skewers from the air fryer using tongs. Garnish with additional chopped parsley and a sprinkle of grated Parmesan cheese if desired.
  10. Serve immediately while hot and crispy. These skewers pair well with a side salad, rice, or dipping sauce of your choice.
