- 2 large eggs
- ⅓ cup vegetable oil
- 1 cup sour cream
- ½ cup warm brewed coffee
- 1 teaspoon peppermint extract
- 1 cup chocolate chips
- Crushed peppermint candies for topping (optional)
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Line a loaf pan with parchment or grease well. Preheat oven to 350°F (177°C).
- Whisk flour, cocoa powder, baking soda, baking powder, and salt together.
- Whisk sugar, eggs, and oil until smooth. Add sour cream and mix again.
- Stir in warm brewed coffee and peppermint extract until combined.
- Add dry ingredients to wet, mixing gently until just combined to avoid density.
- Fold in chocolate chips evenly throughout the batter.
- Pour into loaf pan and bake 50–60 minutes, or until a toothpick comes out clean or with moist crumbs.
- Let bread cool completely before icing or adding crushed peppermint.
- Drizzle icing on top and sprinkle peppermint candies if desired.
