Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, diced
  • 1 cup unsalted cashews
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger to create the marinade.
  3. Add chicken pieces to the marinade and coat well. Let marinate for at least 15 minutes.
  4. Arrange marinated chicken, bell peppers, and red onion in a single layer on a sheet pan.
  5. Drizzle any remaining marinade over the ingredients and season with salt and pepper.
  6. Bake for 20 minutes. Stir gently to ensure even cooking.
  7. Sprinkle cashews over the chicken and vegetables. Bake for an additional 10-15 minutes until chicken is cooked through and caramelized.
  8. Garnish with fresh cilantro and serve hot, optionally with rice or noodles.
