Description

Welcome to a recipe that promises to make your dinner both effortless and delightful! This One-Pot Chicken and Rice dish combines tender chicken, creamy rice, and Parmesan cheese into a flavorful meal. Perfect for busy weeknights, it’s a breeze to make and even easier to clean up. Let’s get cooking!

Ingredients

Scale
  • lbs boneless, skinless chicken breasts, diced
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 Tbsp Italian seasoning (divided)
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 2½ cups chicken broth
  • 1 cup uncooked long-grain white rice
  • ¾ cup heavy cream
  • ⅓ cup grated Parmesan cheese

Optional Add-Ins:

  • Vegetables such as onions, peppers, broccoli, spinach, or mushrooms.

Instructions

Step1: Prep the Chicken

Dice chicken into bite-sized pieces and season with 1 tsp of Italian seasoning.

Step2: Cook the Chicken

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5 minutes until browned. Remove and set aside.

Step3: Sauté Garlic & Cook Rice

Using the same skillet, sauté minced garlic for 30 seconds. Stir in chicken broth and uncooked rice. Bring the mixture to a boil, then lower the heat to medium-low. Cover and simmer for 15-20 minutes until the rice is tender.

Step4: Add Cream & Cheese

Once the rice is cooked, stir in heavy cream and Parmesan cheese. Return the chicken to the skillet and mix in the remaining Italian seasoning and onion powder. Adjust seasoning with salt and pepper.

Notes

  • Use fresh garlic and high-quality Parmesan for optimal flavor.
  • Substitute chicken breasts with thighs or tenderloins for a juicier option.
  • Add your favorite vegetables to make it a one-pot balanced meal.
