  • 1 teaspoon baking soda

  • 3 cups old fashioned oats
  • 1 cup unsalted butter, room temperature (for frosting)
  • 7 oz marshmallow fluff/cream
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together flour, baking soda, salt, cinnamon, and oats.
  3. In another bowl, cream butter and sugars until light and fluffy.
  4. Add eggs and vanilla; mix well.
  5. Gradually add dry ingredients to wet, mixing until just combined.
  6. Chill dough for 15 minutes.
  7. Scoop dough onto prepared baking sheets and bake for 8–9 minutes until set but not browned.
  8. Cool on wire racks.
  9. For frosting, beat together butter and marshmallow fluff until fluffy.
  10. Mix in powdered sugar and vanilla.
  11. Spread frosting between two cooled cookies to assemble.
