- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon vodka
- 1 cup fresh lemon juice
- 2 large egg yolks
- Whipped cream for topping
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into a baking dish and bake for 8-10 minutes until golden. Cool completely.
- Beat cream cheese in a bowl until smooth; gradually add powdered sugar, vodka, and vanilla. Fold in whipped cream and spread over the cooled crust. Refrigerate.
- In a saucepan, whisk together lemon juice, sugar, cornstarch, and water over medium heat until bubbling. Temper egg yolks with hot mixture; return to saucepan and stir until thickened. Pour over the filling once cooled.
- Chill for at least 4 hours before serving.
