Description

Moscow Slice is a refreshing, layered dessert inspired by the classic Moscow Mule cocktail with a crunchy graham cracker crust, creamy vodka-infused filling, and a tangy lemon layer topped with whipped cream.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon vodka
  • 1 cup fresh lemon juice
  • 2 large egg yolks
  • Whipped cream for topping

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into a baking dish and bake for 8-10 minutes until golden. Cool completely.
  2. Beat cream cheese in a bowl until smooth; gradually add powdered sugar, vodka, and vanilla. Fold in whipped cream and spread over the cooled crust. Refrigerate.
  3. In a saucepan, whisk together lemon juice, sugar, cornstarch, and water over medium heat until bubbling. Temper egg yolks with hot mixture; return to saucepan and stir until thickened. Pour over the filling once cooled.
  4. Chill for at least 4 hours before serving.
