Create colorful Monster Cupcakes for Halloween with frosting, candy, and creativity.
Ingredients

- 24 baked and cooled cupcakes (from scratch or your favorite mix)
- 1 lb unsalted butter (at cool room temperature)
- 2 TBSP milk (can substitute water)
- ½ tsp salt
- 1 TBSP vanilla extract
- 28 oz powdered sugar (7 cups, sifted after measuring)
- Assorted gel food coloring (lemon yellow, regal purple, royal blue, orange, electric green)
- 48 Candy eyeballs (any size or color)
- Assorted candy (Gummy lifesavers, Mike & Ikes, Candy corn, Skittles, Airheads)
Instructions
- Beat the butter until very white and pale, about 3-4 minutes.
- Add milk, salt, and vanilla, mixing until well incorporated.
- Slowly add powdered sugar with the mixer running on low.
- Adjust consistency with more milk or powdered sugar as needed.
- Separate frosting into bowls and color with gel food coloring.
- Chill the colored frosting for at least 1 hour.
- Prepare piping bags with each color of frosting.
- Pipe a large round ball of frosting on top of a cupcake for the Lotsa Eyeballs Monster and decorate with eyeballs.
- For the Shaggy Monster, cover with overlapping strings of frosting.
- For the Hairy Monster, use small pulses of frosting to create hair.
- For the Spiky Monster, use small pulses with a star tip to create texture.
- Immediately decorate with candy to create monster faces.
- Store extras in an airtight container at room temperature for 2-3 days or in the refrigerator for up to a week.
Notes
- Chilling frosting helps with application.
- Work in batches of 2-3 cupcakes for best results.
- Cut or shape candy for decoration as desired.
