Description

Create colorful Monster Cupcakes for Halloween with frosting, candy, and creativity.


Ingredients

Scale
  • 24 baked and cooled cupcakes (from scratch or your favorite mix)
  • 1 lb unsalted butter (at cool room temperature)
  • 2 TBSP milk (can substitute water)
  • ½ tsp salt
  • 1 TBSP vanilla extract
  • 28 oz powdered sugar (7 cups, sifted after measuring)
  • Assorted gel food coloring (lemon yellow, regal purple, royal blue, orange, electric green)
  • 48 Candy eyeballs (any size or color)
  • Assorted candy (Gummy lifesavers, Mike & Ikes, Candy corn, Skittles, Airheads)

Instructions

  1. Beat the butter until very white and pale, about 3-4 minutes.
  2. Add milk, salt, and vanilla, mixing until well incorporated.
  3. Slowly add powdered sugar with the mixer running on low.
  4. Adjust consistency with more milk or powdered sugar as needed.
  5. Separate frosting into bowls and color with gel food coloring.
  6. Chill the colored frosting for at least 1 hour.
  7. Prepare piping bags with each color of frosting.
  8. Pipe a large round ball of frosting on top of a cupcake for the Lotsa Eyeballs Monster and decorate with eyeballs.
  9. For the Shaggy Monster, cover with overlapping strings of frosting.
  10. For the Hairy Monster, use small pulses of frosting to create hair.
  11. For the Spiky Monster, use small pulses with a star tip to create texture.
  12. Immediately decorate with candy to create monster faces.
  13. Store extras in an airtight container at room temperature for 2-3 days or in the refrigerator for up to a week.

Notes

  • Chilling frosting helps with application.
  • Work in batches of 2-3 cupcakes for best results.
  • Cut or shape candy for decoration as desired.
