Mom’s Famous Cream Puffs Recipe
Ingredients

- Choux Pastry
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- Pastry Cream Filling
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Bring 1 cup of water to a gentle boil in a medium saucepan.
- Add 1/2 cup of unsalted butter and 1/4 tsp salt; stir until melted.
- Quickly add 1 cup of sifted all-purpose flour and stir vigorously.
- Cook until the mixture forms a ball, about 2-3 minutes.
- Remove from heat and let it cool for 5 minutes.
- Gradually mix in 4 large eggs, one at a time, until smooth.
- Prepare a baking sheet with parchment paper.
- Transfer dough to a piping bag and pipe small mounds onto parchment.
- Preheat oven to 425°F (220°C) and bake for 20 minutes.
- Reduce temperature to 375°F (190°C) and bake for 10-15 minutes.
- Turn off oven and leave the door ajar for 10 minutes.
- Pierce the bottom of each puff with a toothpick and cool on a wire rack.
Notes
- Ensure all ingredients are at room temperature for best results.
- Do not open the oven door while baking.
