- 1 large eggplant, cut into 1/2-inch thick slices
- 2 tablespoons white miso paste
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon soy sauce
- 1 tablespoon sesame seeds, for garnish
- 2 green onions, thinly sliced, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the miso paste, rice vinegar, honey, sesame oil, and soy sauce until well combined.
- Arrange the eggplant slices in a single layer on a baking sheet lined with parchment paper.
- Brush the eggplant slices generously with the miso glaze, making sure to coat the tops and sides.
- Bake for 20-25 minutes, or until the eggplant is tender and the glaze is caramelized.
- Remove the eggplant from the oven and sprinkle with sesame seeds and green onions.
- Serve the Miso Glazed Eggplant immediately, with any extra glaze drizzled over the top.
