Description

Ingredients

  • 1 large eggplant, cut into 1/2-inch thick slices
  • 2 tablespoons white miso paste
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, rice vinegar, honey, sesame oil, and soy sauce until well combined.
  3. Arrange the eggplant slices in a single layer on a baking sheet lined with parchment paper.
  4. Brush the eggplant slices generously with the miso glaze, making sure to coat the tops and sides.
  5. Bake for 20-25 minutes, or until the eggplant is tender and the glaze is caramelized.
  6. Remove the eggplant from the oven and sprinkle with sesame seeds and green onions.
  7. Serve the Miso Glazed Eggplant immediately, with any extra glaze drizzled over the top.
