Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup heavy cream
- 1/4 cup chocolate syrup
- 1/4 cup mint chocolate chips

Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom and up the sides of a 9-inch pie plate to form the crust.
- Bake the crust for 8-10 minutes. Remove from oven and let cool.

- Bake for 35-45 minutes, or until the center is almost set. The center should have a slight jiggle.
- Let the mint chocolate cheesecake pie cool completely on a wire rack.
- Chill the mint chocolate cheesecake pie in the refrigerator for at least 4 hours, or until firm.
