Ingredients

  • 1 lb (450 g) ground beef
  • 1 cup (240 ml) finely chopped onion
  • 2 cloves garlic
  • 1 cup (240 ml) breadcrumbs
  • 1/2 cup (120 ml) milk
  • 1/4 cup (60 ml) ketchup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups (450 g) mashed potatoes
  • 1/4 cup (60 ml) butter or a vegan alternative
  • 1/4 cup (60 ml) milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or olive oil.
  3. In a large bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, and milk.
  4. Season the mixture with salt and pepper, folding gently until just combined.
  5. Spoon the meat blend into each muffin cup, filling them three-quarters full.
  6. Add a small dollop of ketchup on top of each muffin.
  7. Place the muffin tin in the oven and bake for 20-25 minutes.
  8. Check that the internal temperature reaches 160°F (70°C).
  9. Remove from the oven and cool slightly in the tin.
  10. In a medium bowl, combine mashed potatoes, softened butter, and a splash of milk.
  11. Whip until light, creamy, and free of lumps; season with salt and pepper.
  12. Transfer the mashed potato frosting to a piping bag and pipe onto each muffin.
