Description

Mediterranean Quesadillas with Spinach, Feta, and Mozzarella are a fresh, flavorful twist on a classic quesadilla. Crispy tortillas are filled with tender spinach, tangy feta, melty mozzarella, and sweet red onion for a quick, satisfying vegetarian meal.


Ingredients

  • Flour tortillas
  • Fresh spinach
  • Feta cheese, crumbled
  • Mozzarella cheese, shredded
  • Red onion, thinly sliced
  • Olive oil
  • Salt
  • Black pepper
  • Olives
  • Sun-dried tomatoes
  • Dried oregano or basil

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook red onion until softened and lightly golden. Add spinach and cook just until wilted. Season with salt and pepper, then remove from heat.
  2. Lay a tortilla flat and sprinkle mozzarella over half. Add spinach and onion mixture, then top with crumbled feta. Fold tortilla closed.
  3. Heat a clean skillet over medium heat with a little olive oil. Cook quesadilla until golden and crisp on the bottom, then flip and cook until cheese is fully melted.
  4. Transfer to a cutting board, let rest briefly, then slice.
  5. Serve warm on their own or with yogurt sauce, hummus, or a fresh salad.
