Ingredients
- Flour tortillas
- Fresh spinach
- Feta cheese, crumbled
- Mozzarella cheese, shredded
- Red onion, thinly sliced
- Olive oil
- Salt
- Black pepper
- Olives
- Sun-dried tomatoes
- Dried oregano or basil
Instructions
- Heat olive oil in a skillet over medium heat. Cook red onion until softened and lightly golden. Add spinach and cook just until wilted. Season with salt and pepper, then remove from heat.
- Lay a tortilla flat and sprinkle mozzarella over half. Add spinach and onion mixture, then top with crumbled feta. Fold tortilla closed.
- Heat a clean skillet over medium heat with a little olive oil. Cook quesadilla until golden and crisp on the bottom, then flip and cook until cheese is fully melted.
- Transfer to a cutting board, let rest briefly, then slice.
- Serve warm on their own or with yogurt sauce, hummus, or a fresh salad.
