Ingredients

  • 8 oz fettuccine or pasta of choice, uncooked
  • 1 tablespoon olive oil
  • 1 tablespoon salt (for pasta water)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1/2 cup finely diced onion
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Bring a large pot of water to a boil. Add salt and pasta. Cook until al dente, reserving 1/2 cup pasta water before draining.
  2. Season chicken with Italian seasoning, paprika, salt, and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat and cook chicken for 4–5 minutes until golden. Remove and set aside.
  3. In the same skillet, heat remaining olive oil if needed. Add onion and cook for 2–3 minutes. Stir in garlic and cook 30 seconds.
  4. Add sun-dried tomatoes and red pepper flakes. Deglaze the pan with chicken broth, scraping any browned bits.
  5. Lower heat to medium. Stir in cream and simmer 3–4 minutes until thickened. Add Parmesan and stir to melt.
  6. Return chicken to skillet and mix. Add cooked pasta and toss. Use reserved pasta water to loosen sauce if needed. Garnish with basil and extra Parmesan to serve.

  • Use gluten-free pasta for a gluten-free version.
  • Use coconut cream and dairy-free cheese for a dairy-free version.
  • Dry chicken before cooking for better browning.
