  • 3 tablespoons maple syrup
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme leaves, salt, and pepper until well coated.
  3. Spread the parsnips in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, flipping the parsnips halfway through, until they are tender and caramelized.
