Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme leaves, salt, and pepper until well coated.
- Spread the parsnips in a single layer on a baking sheet.
- Roast for 25-30 minutes, flipping the parsnips halfway through, until they are tender and caramelized.
