- 4 medium apples, peeled, cored, and cut into 1-inch chunks
- 6 medium carrots, peeled and cut into 1-inch pieces
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chopped apples and carrots.
- In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
- Pour the maple-Dijon mixture over the apples and carrots and toss to coat evenly.
- Spread the coated vegetables in a single layer on a large, parchment-lined baking sheet.
- Roast for 25-30 minutes, or until the apples and carrots are tender and caramelized, tossing halfway through.
