- 1 cup sweet (glutinous) rice, soaked for at least 4 hours or overnight
- 1 (13.5 oz) can coconut milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 large ripe mangoes, peeled and sliced
Instructions
- Drain the soaked rice and place it in a steamer basket. Steam the rice for 15-20 minutes, or until it is tender and translucent.
- In a saucepan, combine the coconut milk, sugar, and salt. Bring the mixture to a simmer, stirring occasionally, until the sugar has dissolved.
- Add the cooked rice to the coconut milk mixture and stir gently to combine. Cook for 5-10 minutes, or until the rice has absorbed the coconut milk and become creamy.
- Remove the rice from heat and let it cool slightly. Serve the Mango Sticky Rice warm or chilled, topped with fresh mango slices.
