  • 1 cup lemon curd
  • 2 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour mini muffin tins.
  2. In a large bowl, cream together the softened butter and 1/2 cup sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Press about 1 tablespoon of dough into each mini muffin cup, forming a shell.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Let cool slightly before removing from the tins.
  7. While the cookie cups are cooling, prepare the meringue. In a clean, dry bowl, beat the egg whites and cream of tartar until soft peaks form.
  8. Gradually add the 1/2 cup sugar, beating until stiff, glossy peaks form.
  9. Spoon or pipe the lemon curd into the cooled cookie cups.
  10. Top each cookie cup with a dollop of meringue.
  11. You can torch the meringue for a golden-brown finish or bake them for an additional 2-3 minutes until the meringue is lightly browned.
