Lemon Capellini Salad is a refreshing and flavorful pasta dish that’s perfect for summer. Made with tender capellini noodles, crisp vegetables, and a tangy lemon vinaigrette.

- 8 ounces capellini pasta
- 1 cup halved cherry tomatoes
- 1 cup diced cucumber
- 1/2 cup diced red bell pepper
- 1/4 cup thinly sliced red onion
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the capellini according to package instructions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooked capellini, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.
- In a small bowl, whisk together the olive oil, lemon juice, vinegar, Dijon mustard, and garlic. Season with salt and pepper to taste.
- Pour the lemon vinaigrette over the salad and toss gently to coat. Refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
