  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in melted butter and mix until combined. Press mixture evenly into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 cup sugar until smooth.
  5. Beat in eggs one at a time. Stir in vanilla extract, sour cream, lemon juice, and lemon zest.
  6. Pour half of the cream cheese mixture over the prepared crust. Sprinkle half of the blueberries over the cream cheese layer.
  7. Pour the remaining cream cheese mixture over the blueberries. Sprinkle the remaining blueberries on top.
  8. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  9. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  10. Remove from oven and let cool completely on a wire rack.
  11. Chill the lemon blueberry cheesecake in the refrigerator for at least 4 hours, or preferably overnight, before serving.

Notes

  • For a no-bake lemon blueberry cheesecake, chill the filling until firm without baking.
  • Garnish with extra blueberries and lemon zest if desired.
