- 1 cup dried brown or green lentils, rinsed
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, combine the rinsed lentils and broth. Bring to a boil over high heat.
- Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the lentils are tender.
- In a separate skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until translucent.
- Add the minced garlic, cumin, coriander, and cayenne (if using). Cook for 1-2 minutes, stirring constantly, until fragrant.
- Add the sautéed onion and garlic mixture to the pot of cooked lentils. Stir in the freshly squeezed lemon juice.
- Season with salt and black pepper to taste.
- Ladle the Lebanese Lemon Lentil Soup into bowls and garnish with chopped fresh parsley.
