- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Spread the dough evenly into the prepared baking pan.
- Bake for 18-20 minutes, or until the crust is golden brown. Allow to cool completely in the pan.
- In a large bowl, beat the heavy cream with the powdered sugar until stiff peaks form.
- Carefully split the cooled cake horizontally into two even layers. Spread the whipped cream between the layers and on top of the cake.
- Refrigerate the Karpatka Cake for at least 2 hours before serving to allow the cream to set.
