- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup honey
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups red bean paste (anko)
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, beat eggs and sugar until light and fluffy.
- Stir in honey, milk, and vanilla extract into the egg mixture.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Heat a lightly greased griddle or non-stick pan over medium heat.
- Pour about 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown.
- Spread a generous amount of red bean paste on one pancake.
- Top with another pancake, red bean paste side down, to create a sandwich. This is your Japanese Red Bean Pancake.
- Repeat with the remaining batter and red bean paste to make more Dorayaki.
