For the Chicken:

  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Sauce:

  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • ½ cup dry white wine (such as Pinot Grigio or Chardonnay)
  • 1 cup heavy cream
  • ½ cup grated Asiago cheese (or Parmesan)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional for heat)
  • 2 tablespoons fresh parsley, chopped

Optional Garnishes:

  • Extra grated cheese
  • Fresh basil leaves

Instructions

Step1: Prepare the Chicken

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides with salt, pepper, Italian seasoning, and garlic powder.

Step2: Sear the Chicken

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add the chicken breasts and sear for 4-5 minutes per side until golden brown.
  3. Remove from the pan and set aside.

Step3: Cook the Aromatics

  1. In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
  2. Add the sliced mushrooms and cook for 3-4 minutes until softened.

Step4: Deglaze the Pan

  1. Pour in the white wine and scrape the bottom of the pan to release any browned bits.
  2. Let it simmer for 2 minutes to reduce slightly.

Step5: Make the Creamy Sauce

  1. Add chicken broth, heavy cream, oregano, basil, and red pepper flakes.
  2. Stir well and let the sauce simmer for 3-4 minutes until slightly thickened.

Step6: Return the Chicken & Finish Cooking

  1. Place the seared chicken back into the skillet.
  2. Spoon the sauce over the chicken and let it simmer for 5-7 minutes, or until the chicken is cooked through.

Step7: Add Cheese & Serve

  1. Sprinkle Asiago cheese over the chicken and let it melt into the sauce.
  2. Garnish with fresh parsley and serve hot.

Notes

  • Use a meat thermometer: Chicken should reach an internal temperature of 165°F (75°C).
  • Thicken the sauce: If you want a thicker sauce, add 1 teaspoon of cornstarch mixed with 2 tablespoons of water.
  • Swap the cheese: If you don’t have Asiago, use Parmesan, Pecorino Romano, or even mozzarella for a gooey texture.
  • Add more veggies: Spinach, sun-dried tomatoes, or bell peppers make great additions.
