- 2 tablespoons olive oil
- 2 tablespoons butter
For the Sauce:
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- ½ cup dry white wine (such as Pinot Grigio or Chardonnay)
- 1 cup heavy cream
- ½ cup grated Asiago cheese (or Parmesan)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional for heat)
- 2 tablespoons fresh parsley, chopped
Optional Garnishes:
- Extra grated cheese
- Fresh basil leaves
Instructions
Step1: Prepare the Chicken
- Pat the chicken breasts dry with paper towels.
- Season both sides with salt, pepper, Italian seasoning, and garlic powder.
Step2: Sear the Chicken
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the chicken breasts and sear for 4-5 minutes per side until golden brown.
- Remove from the pan and set aside.
Step3: Cook the Aromatics
- In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 3-4 minutes until softened.
Step4: Deglaze the Pan
- Pour in the white wine and scrape the bottom of the pan to release any browned bits.
- Let it simmer for 2 minutes to reduce slightly.
Step5: Make the Creamy Sauce
- Add chicken broth, heavy cream, oregano, basil, and red pepper flakes.
- Stir well and let the sauce simmer for 3-4 minutes until slightly thickened.
Step6: Return the Chicken & Finish Cooking
- Place the seared chicken back into the skillet.
- Spoon the sauce over the chicken and let it simmer for 5-7 minutes, or until the chicken is cooked through.
Step7: Add Cheese & Serve
- Sprinkle Asiago cheese over the chicken and let it melt into the sauce.
- Garnish with fresh parsley and serve hot.
Notes
- Use a meat thermometer: Chicken should reach an internal temperature of 165°F (75°C).
- Thicken the sauce: If you want a thicker sauce, add 1 teaspoon of cornstarch mixed with 2 tablespoons of water.
- Swap the cheese: If you don’t have Asiago, use Parmesan, Pecorino Romano, or even mozzarella for a gooey texture.
- Add more veggies: Spinach, sun-dried tomatoes, or bell peppers make great additions.
