  • 1 large onion
  • 2 cloves garlic
  • 4 cups chicken broth (or vegetable broth)
  • 3 large potatoes
  • 4 cups green cabbage

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving the drippings.
  2. Sauté diced onion in the bacon drippings until softened, about 5 minutes. Add minced garlic and cook for another minute.
  3. Pour in the chicken broth and add diced potatoes. Bring to a boil, then simmer until potatoes are tender (10-15 minutes).
  4. Stir in shredded cabbage along with salt, pepper, and thyme; simmer for another 5-7 minutes until cabbage is tender.
  5. Remove from heat, stir in whole milk for creaminess.
