- 1 large red onion, thinly sliced
- ¾ cup apple cider vinegar
- ½ cup water
- 2 tablespoons hot honey (or honey + pinch red pepper flakes)
- 1 teaspoon salt
- 1 garlic clove, smashed
- ½ teaspoon whole peppercorns
- 1 bay leaf
- Extra red pepper flakes for more heat
Instructions
- Peel and thinly slice the red onion into rings or half-moons using a sharp knife or mandoline.
- In a small saucepan over medium heat, combine vinegar, water, hot honey, and salt. Stir until salt dissolves and mixture is warm (do not boil).
- Place sliced onions into a clean, heat-safe glass jar. Add optional garlic, peppercorns, or bay leaf if desired.
- Carefully pour the warm brine over the onions until fully submerged.
- Let sit at room temperature for 30 minutes. Seal and refrigerate for at least 1 hour before serving, preferably 8 hours for best flavor.
Notes
- These onions taste better after marinating overnight.
- Adjust the heat by adding more red pepper flakes.
