Description

Hot Honey Pickled Red Onions are sweet, tangy, and gently spicy—an easy quick-pickle recipe that adds bold flavor and vibrant color to tacos, sandwiches, grain bowls, salads, and more.


Ingredients

  • 1 large red onion, thinly sliced
  • ¾ cup apple cider vinegar
  • ½ cup water
  • 2 tablespoons hot honey (or honey + pinch red pepper flakes)
  • 1 teaspoon salt
  • 1 garlic clove, smashed
  • ½ teaspoon whole peppercorns
  • 1 bay leaf
  • Extra red pepper flakes for more heat

Instructions

  1. Peel and thinly slice the red onion into rings or half-moons using a sharp knife or mandoline.
  2. In a small saucepan over medium heat, combine vinegar, water, hot honey, and salt. Stir until salt dissolves and mixture is warm (do not boil).
  3. Place sliced onions into a clean, heat-safe glass jar. Add optional garlic, peppercorns, or bay leaf if desired.
  4. Carefully pour the warm brine over the onions until fully submerged.
  5. Let sit at room temperature for 30 minutes. Seal and refrigerate for at least 1 hour before serving, preferably 8 hours for best flavor.

Notes

  • These onions taste better after marinating overnight.
  • Adjust the heat by adding more red pepper flakes.
