Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter
  • 2 cups cream cheese
  • 1 cup (240 ml) granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a medium bowl.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until lightly golden.
  5. Cool the crust while preparing the filling.
  6. Beat softened cream cheese until smooth and creamy for about 2 minutes.
  7. Gradually mix in granulated sugar and vanilla extract until combined.
  8. Add eggs one by one, mixing on low speed until just combined.
  9. Fold in sour cream until the filling is smooth and creamy.
  10. Pour the filling over the cooled crust and spread evenly.
  11. Bake the cheesecake for 50-60 minutes until edges are set.
  12. Turn off the oven, crack the door, and cool for about an hour.
