Description
Heart-Shaped Macarons are an elegant Valentine’s Day treat with smooth, crisp shells, soft chewy centers, and a creamy vanilla filling.

- 90g egg whites, aged and at room temperature
- 90g granulated sugar
- 95g almond flour, finely ground and sifted
- 95g powdered sugar
- Gel food coloring (pink, red, or desired color)
- 1/2 cup (113g) unsalted butter, softened
- 1 1/2 cups (180g) powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream or milk
- Pinch of salt
Instructions
- Sift almond flour and powdered sugar together twice. Set aside.
- Whip egg whites until foamy. Gradually add granulated sugar and whip to stiff, glossy peaks. Add gel food coloring if using.
- Fold dry ingredients into the meringue until batter flows like lava and forms a ribbon.
- Pipe small “V” shapes on lined baking trays to form hearts. Tap trays and pop air bubbles.
- Let shells rest 30–60 minutes until a skin forms.
- Bake at 300°F (150°C) for 14–16 minutes until set with feet.
- Cool completely, then sandwich shells with buttercream filling.
