- 1 lb ground turkey (93% lean recommended)
- 2 medium zucchini (about 1 lb), diced into ½-inch cubes
- 1 medium yellow onion, finely chopped
- 3–4 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon olive oil (extra virgin recommended)
- 1 (14.5 oz) can diced tomatoes, undrained (petite diced work well)
- 1 tablespoon tomato paste
- ¼ cup chicken broth (low sodium preferred)
- 1 teaspoon balsamic vinegar
- 1 ½ teaspoons Italian seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes (optional)
- ¾ teaspoon kosher or sea salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- Fresh parsley or basil, chopped (optional, for garnish)
- Grated Parmesan cheese (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 3-4 minutes. Then add the minced garlic and cook for another minute until fragrant.
- Push the onions and garlic to one side of the skillet. Add the ground turkey to the empty side. Let it brown undisturbed for 3-4 minutes, then break it up and cook until no longer pink, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced zucchini, Italian seasoning, smoked paprika, optional red pepper flakes, salt, and pepper to the skillet. Stir well and cook for 2-3 minutes.
- Stir in the tomato paste and cook for 1 minute. Pour in the diced tomatoes along with their juice and the chicken broth. Stir everything together, scraping any browned bits off the bottom of the pan.
- Bring the mixture to a simmer. Reduce heat to medium-low, cover, and let it simmer for 8-10 minutes, or until the zucchini is tender-crisp.
- Remove the skillet from the heat. Stir in the balsamic vinegar, taste, and adjust seasonings if necessary. Garnish with fresh herbs and grated Parmesan cheese if desired, and serve immediately.
