Ingredients
- 1 pound ground beef
- 2 tablespoons olive oil
- 1 onion finely chopped
- 3 cloves garlic minced
- 1 red bell pepper thinly sliced
- 1 zucchini cut into half-moons
- 1 cup cherry tomatoes halved
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes optional
- 1/4 cup fresh parsley chopped
- 1/2 cup feta cheese crumbled optional
- Lemon wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft, about 2–3 minutes. Add garlic and stir until fragrant.
- Add ground beef to the skillet. Break it up with a spoon as it cooks. Season with cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if using). Continue cooking for 6–8 minutes until the beef is browned and fully cooked.
- Add red bell pepper and zucchini to the skillet. Sauté for 4–5 minutes until just tender. Add cherry tomatoes and cook for another 2 minutes, just until they start to soften.
