Ingredients
- 12 tostada shells
- Cooking spray
- 1½ lb raw peeled shrimp
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ¼ tsp black pepper
- 2 tsp olive oil
- 2 avocados, mashed
- ½ small bunch cilantro, minced
- 1 tsp minced garlic
- Juice from 1 lime
- ½ tsp salt
- ¼ tsp pepper
- 3–4 tomatoes, seeded and diced
- 1 tsp minced garlic
- 1 jalapeño, minced
- ½ medium red onion, minced
- ½ small bunch cilantro, minced
Instructions
- In a bowl, mix chili powder, cumin, oregano, garlic powder, onion powder, salt, pepper, and olive oil. Toss the shrimp in the mixture.
- Combine mashed avocados with cilantro, garlic, lime juice, salt, and pepper in a bowl. Mix well to create your guacamole.
- In another bowl, mix diced tomatoes, garlic, jalapeño, red onion, and cilantro for the pico de gallo.
- Heat a grill pan or skillet over medium heat and coat with cooking spray. Grill shrimp for 1–2 minutes per side, or until opaque, to make your grilled shrimp for tostadas.
- Place tostada shells on plates. Top each with guacamole, the grilled shrimp, and a generous spoonful of pico de gallo. Serve these grilled shrimp tostadas immediately.
Notes
- For spicier grilled shrimp, add a pinch of cayenne pepper to the marinade.
- You can use store-bought pico de gallo if you’re short on time.
- These grilled shrimp tostadas are best served immediately after assembly to maintain the crispness of the tostada shells.
