Ingredients

- 8 lamb rib or loin chops (about 1 inch thick)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Whisk olive oil, garlic, rosemary, lemon juice, Dijon (if using), salt, and pepper.
- Coat lamb chops evenly with marinade. Marinate 30 minutes at room temperature or up to 4 hours refrigerated.
- Heat grill or grill pan to medium-high and lightly oil grates.
- Grill lamb chops 3–4 minutes per side for medium-rare, adjusting time as needed.
- Remove from grill and rest 5 minutes before serving.
