Ingredients

  • 8 lamb rib or loin chops (about 1 inch thick)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Whisk olive oil, garlic, rosemary, lemon juice, Dijon (if using), salt, and pepper.
  2. Coat lamb chops evenly with marinade. Marinate 30 minutes at room temperature or up to 4 hours refrigerated.
  3. Heat grill or grill pan to medium-high and lightly oil grates.
  4. Grill lamb chops 3–4 minutes per side for medium-rare, adjusting time as needed.
  5. Remove from grill and rest 5 minutes before serving.
