Description

A hearty and flavorful green chile stew, perfect for a comforting meal. This recipe features tender pieces of pork or chicken simmered with roasted green chiles, hominy, and a savory broth.


Ingredients

  • 2 lbs pork shoulder or chicken thighs, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 pound fresh green chiles, roasted, peeled, and chopped (or 2 cups frozen chopped green chiles)
  • 1 (15 ounce) can hominy, drained and rinsed
  • 6 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: sour cream, shredded cheese, chopped cilantro, lime wedges

Instructions

  1. If using fresh green chiles, roast them under a broiler or over an open flame until blackened. Place in a bowl, cover, and let steam for 10 minutes. Peel, seed, and chop them.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the pork or chicken pieces on all sides. Remove the meat and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the roasted green chiles, hominy, broth, cumin, and oregano. Bring the mixture to a boil.
  5. Return the browned meat to the pot. Reduce the heat to low, cover, and simmer for at least 1 hour, or until the meat is tender and the flavors have melded. For a slow cooker green chile stew, transfer everything to a slow cooker and cook on low for 4-6 hours.
  6. Season the green chile stew with salt and pepper to taste.
  7. Serve hot, garnished with your favorite toppings.

Notes

  • For a spicier stew, leave some of the chile seeds in.
  • New Mexico green chiles offer a distinct smoky flavor.
  • This dish is excellent as a make-ahead meal, as the flavors deepen overnight.
