  • 2/3 cup Greek yogurt
  • 1 large egg
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/6 tsp salt
  • 1 1/2 cup oat flour
  • 1/2 cup almond flour
  • 2 tsp baking powder
  • 1/4 cup chocolate chips (optional)
  • For High Protein Option: Replace 1/2 cup flour with 1/2 cup protein powder

Instructions

  1. Preheat oven to 350°F (180°C) and line or grease a 20 cm loaf pan.
  2. Mash bananas in a large bowl, then mix in yogurt, egg, maple syrup, vanilla, cinnamon, and salt.
  3. Add oat flour, almond flour, and baking powder. Stir to combine.
  4. Fold in chocolate chips if using.
  5. Adjust batter texture with more flour or milk if needed.
  6. Pour batter into the prepared pan.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
  9. Slice when fully cooled.
