- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons heavy cream
- 1–2 tablespoons blue food coloring
Instructions
- Preheat the oven to 350°F. Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, oil, eggs, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely, then crumble it into a large bowl.
- In a separate bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and heavy cream, mixing until well combined.
- Add the cream cheese mixture to the crumbled cake and mix until a dough-like consistency forms. If needed, add more cream or powdered sugar to achieve the desired texture.
- Scoop the mixture by the tablespoonful and roll into balls. Place the cake pops on a parchment-lined baking sheet.
- In a small bowl, mix together the blue food coloring and 2 tablespoons of the cream cheese mixture until well combined.
- Dip the cake pops into the blue coating, allowing any excess to drip off. Place the coated pops back on the baking sheet.
- Refrigerate the cake pops for at least 30 minutes before serving.
