  • 8 large eggs
  • 1/4 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1/2 cup diced onion
  • 1 bell pepper, diced
  • 1 cup baby spinach or kale
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar, feta, mozzarella, or goat cheese)
  • Optional: 1/2 cup cooked bacon, sausage, or diced ham

Instructions

  1. Preheat oven to 375°F (190°C). Whisk eggs, milk, salt, and pepper until smooth.
  2. Heat oil or butter in an oven-safe skillet. Cook onion and bell pepper until soft. Add greens and tomatoes (and meat if using).
  3. Pour egg mixture evenly over vegetables. Sprinkle cheese on top.
  4. Cook 3–4 minutes until edges begin to set.
  5. Transfer skillet to oven and bake 10–15 minutes until center is set.
  6. Let rest 5 minutes before slicing and serving.
