Ingredients
- 2 cups heavy cream (35% fat)
- 5 egg yolks
- 0.5 cup white sugar
- 2 teaspoons vanilla extract (or 1 vanilla pod)
- Pinch of salt
- 6 tablespoons caster sugar (for topping)
Instructions
- Preheat your oven to 325°F (160°C) and prepare a water bath by heating water in a pot.
- In a large bowl, whisk together the egg yolks, white sugar, vanilla extract, and salt until well combined.
- Heat the heavy cream in a saucepan until it’s almost boiling, then gradually whisk it into the egg mixture.
- Divide the mixture among ramekins, place them in a baking pan filled with hot water until about 1¾ inches deep, and bake for 30-35 minutes until set but still jiggly.
- Cool completely before chilling in the fridge for at least four hours. Just before serving, sprinkle with caster sugar and caramelize using a kitchen torch.
