Ingredients

  • 3/4 cup milk
  • 1.5 tablespoons oil or melted butter
  • 1 egg
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a large bowl, sift together flour, baking powder, and salt.
  2. In another bowl, whisk milk, egg, sugar, oil (or melted butter), and vanilla until smooth.
  3. Gently pour the wet ingredients into the dry. Fold with a spatula just until combined—don’t overmix.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.
  5. Pour about 1/4 cup of batter onto the skillet. Cook until bubbles form and edges look set.
  6. Flip carefully and cook another minute or until golden brown. Repeat with remaining batter.
  7. Stack the pancakes and serve with butter, maple syrup, whipped cream, or toppings of choice.
