Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- On a lightly floured surface, roll the dough out to a 1/4-inch thickness.
- In a small bowl, mix the chopped figs and honey.
- Spread the fig mixture evenly over the dough, leaving a 1/2-inch border.
- Carefully roll the dough into a log, starting from the long side. Pinch the seam to seal.
- Slice the log into 1-inch thick cookies and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
