  • 1 cup boiling water
  • ½ cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon peppermint extract
  • ¼ cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • Crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, salt, and coffee granules. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla; blend until smooth. Stir in boiling water carefully.
  4. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely.
  5. For frosting: Beat softened butter and cream cheese until fluffy; gradually add powdered sugar and peppermint extract until smooth.
  6. Prepare ganache by warming heavy cream and stirring in chocolate chips until melted.
  7. Assemble by frosting layers with peppermint frosting, pouring ganache over the top, and garnishing with crushed candies.
