- Coarse sugar for rolling
- A light dusting of powdered sugar
Instructions
- In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy.
- Mix in the espresso powder and vanilla extract until fully dissolved.
- Gradually add the all-purpose flour and salt, mixing until just combined.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C). Roll the chilled dough on a floured surface to about ¼ inch thickness.
- Cut out shapes using a cookie cutter and place them on a parchment-lined baking sheet.
- Bake for 12–15 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a cooling rack.
